Mama's Mixing Bowl: Sausage & Hashbrown Brunch Bake

 

Some mornings call for more than just a granola bar and coffee — you know the ones. Whether it's a lazy Sunday, a breakfast-for-dinner kind of night, or you're just trying to prep ahead for the week (go you!), this Sausage & Hashbrown Brunch Bake is a warm hug in casserole form. 

This dish is everything a mama dreams of— hearty, simple, cheesy, and freezer friendly. It feeds a crowd or gives you leftovers you'll actually look forward to. 

What You'll Need:

1 lb breakfast sausage (pork or turkey both work great)

1 (30 oz) bag frozen shredded hashbrowns 

6 eggs 

 1 cup milk 

1 1/2 cups shredded cheddar cheese 

Salt, pepper, onion powder to taste 

How To Make It: 

Preheat your oven to 375 degrees 

Brown your sausage in a skillet and drain any grease 

In a large bowl, whisk together the eggs, milk, salt, pepper, and a little onion powder 

Stir in the frozen hashbrowns, browned sausage and cheese 

Pour into a greased 9x13 baking dish and smooth it out 

Bake for 40-45 minutes, or until the top is golden and set in the center 

Let it rest a few minutes before slicing. Serve it up with hot sauce or a squeeze of ketchup!

Want to sneak in some veggies? Toss in chopped bell peppers or spinach.
